Salted Caramel Chocolate Fudge Cake

1. Prepare the Chocolate Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add buttermilk, vegetable oil, eggs, and vanilla extract. Beat on medium speed until well combined.
  • Stir in the boiling water until the batter is smooth. The batter will be thin, but that’s okay.
  • Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool completely.

2. Make the Salted Caramel Sauce:

  • In a saucepan over medium heat, melt granulated sugar, stirring constantly until it turns into a golden amber color.
  • Add the butter and stir until melted. Slowly pour in the heavy cream while stirring continuously.
  • Remove from heat and stir in the sea salt. Allow the caramel sauce to cool.

3. Prepare the Chocolate Fudge Frosting:

  • In a large bowl, beat the softened butter until creamy.
  • Sift in the powdered sugar and cocoa powder. Add the heavy cream and vanilla extract. Beat until smooth and fluffy.

4. Assemble the Cake:

  • Place one chocolate cake layer on a serving plate.
  • Spread a layer of chocolate fudge frosting on top, followed by a drizzle of salted caramel sauce.
  • Place the second cake layer on top and frost the entire cake with the chocolate fudge frosting.
  • Drizzle more salted caramel sauce over the top for decoration.

5. Serve and Enjoy:

  • Slice the cake and serve. Optionally, you can sprinkle a bit more sea salt on top for added garnish.
