- Preheat the Oven:
- Preheat your oven to 180°C (350°F).
- Prepare the Bread and Milk Mixture:
- Tear the white bread into pieces and soak it in 1 cup of milk. Set aside to allow the bread to absorb the milk.
- Cook the Meat Mixture:
- In a large pan, heat the oil over medium heat. Add the finely chopped onions and sauté until softened.
- Add the minced garlic and ground meat. Cook until the meat is browned.
- Add Spices and Flavorings:
- Add the curry powder, turmeric, ground coriander, ground cumin, ground cinnamon, ground cloves, apricot jam, chutney, white vinegar, salt, and pepper to the meat mixture. Stir well to combine.
- Finish the Meat Mixture:
- Squeeze any excess milk from the soaked bread and add the bread to the meat mixture. Mix well.
- Stir in the raisins or sultanas.
- Transfer to Baking Dish:
- Transfer the meat mixture to a greased baking dish and press it down evenly.
- Prepare the Topping:
- In a separate bowl, beat the eggs and add the milk and turmeric. Mix well.
- Top the Bobotie:
- Pour the egg mixture over the meat mixture, ensuring it covers the entire surface.
- Bake:
- Bake in the preheated oven for about 45 minutes or until the top is golden brown and set.
- Serve:
- Allow the Bobotie to cool for a few minutes before slicing and serving. Traditionally, it’s served with yellow rice and chutney.
