Garlic Herb Mashed Potatoes:
Ingredients:
- 2 pounds gold potatoes
- 1 cup beef broth
- 4 tablespoons cream cheese
- 4 tablespoons unsalted butter
- 4 tablespoons roasted garlic
- 4 tablespoons fresh minced herbs (basil, chives, rosemary, oregano, etc.)
- 2 teaspoons salt
- Freshly ground pepper
Instructions:
- Cook potatoes in a covered pot with beef broth over medium heat until very tender (30-40 minutes) or cook in an electric pressure cooker on high pressure for 12 minutes.
- Mash cooked potatoes with cream cheese, butter, roasted garlic, herbs, salt, and pepper until well blended.
- Adjust seasoning with additional salt and pepper if needed.
Cheese Broccoli:
Ingredients:
- 4 cups broccoli
- 1 cup water
- 1 cup milk
- 1 tablespoon cornstarch
- 1 cup shredded cheddar cheese
- 1 tablespoon grated Parmesan cheese
- Salt & pepper to taste
Instructions:
- Wash broccoli and place it in a non-stick skillet with 1 cup of water. Steam covered for 3-5 minutes. Remove and keep warm in a bowl.
- Whisk milk and cornstarch together, then pour into the skillet. Whisk over medium heat until thickened.
- Reduce heat, add cheese, and whisk until smooth. Season with salt and pepper.
- Serve the cheese sauce over the steamed broccoli.
