Garlic Parmesan Pork Chops with Garlic-n-Herb Mashed Potatoes & Cheese Broccoli

Garlic Herb Mashed Potatoes:

Ingredients:

  • 2 pounds gold potatoes
  • 1 cup beef broth
  • 4 tablespoons cream cheese
  • 4 tablespoons unsalted butter
  • 4 tablespoons roasted garlic
  • 4 tablespoons fresh minced herbs (basil, chives, rosemary, oregano, etc.)
  • 2 teaspoons salt
  • Freshly ground pepper

Instructions:

  1. Cook potatoes in a covered pot with beef broth over medium heat until very tender (30-40 minutes) or cook in an electric pressure cooker on high pressure for 12 minutes.
  2. Mash cooked potatoes with cream cheese, butter, roasted garlic, herbs, salt, and pepper until well blended.
  3. Adjust seasoning with additional salt and pepper if needed.

Cheese Broccoli:

Ingredients:

  • 4 cups broccoli
  • 1 cup water
  • 1 cup milk
  • 1 tablespoon cornstarch
  • 1 cup shredded cheddar cheese
  • 1 tablespoon grated Parmesan cheese
  • Salt & pepper to taste

Instructions:

  1. Wash broccoli and place it in a non-stick skillet with 1 cup of water. Steam covered for 3-5 minutes. Remove and keep warm in a bowl.
  2. Whisk milk and cornstarch together, then pour into the skillet. Whisk over medium heat until thickened.
  3. Reduce heat, add cheese, and whisk until smooth. Season with salt and pepper.
  4. Serve the cheese sauce over the steamed broccoli.
