Apple Crisp Bites
Ingredients:
- Apples, peeled and diced
- Butter
- Spices (such as cinnamon, nutmeg)
- Brown sugar
- Water
- Cornstarch
- Flour
- Oats
- Caramel topping (optional)
Directions:
- Preheat Oven and Prepare Muffin Tin
- Preheat the oven to 350 degrees F (175 degrees C).
- Grease a 24-cup mini-muffin tin.
- Prepare Apple Filling
- In a medium-sized pan, melt butter.
- Add diced apples, spices, brown sugar, and 3 tablespoons of water.
- Cook over medium-high heat for 4-6 minutes until apples slightly soften.
- Thicken Filling
- In a small dish, mix cornstarch and 2 tablespoons of water.
- Add the cornstarch mixture to the pan while stirring.
- Continue cooking until the apples are tender and the filling thickens (about 4-5 minutes). Allow it to cool.
- Make Crust
- In a large bowl, combine flour, oats, and brown sugar.
- Cut butter into the flour mixture using a pastry cutter until it resembles coarse crumbs.
- Prepare Muffin Cups
- Place a heaping tablespoon of the crust mixture into each mini-muffin cup.
- Press along the bottom and sides to form a “cup”, leaving some crust mixture leftover.
- Fill the Cups
- Spoon about 1 tablespoon of apple filling into each crust cup.
- Sprinkle approximately 1 teaspoon of the remaining crust mixture on top of the filling.
- Bake
- Bake in the preheated oven until golden brown, around 15 to 20 minutes.
- Cool and Serve
- Allow the bites to cool in the pan for about 10 minutes.
- Use a knife to loosen them from the pan, and they should easily come out.
- If desired, drizzle caramel topping over the cooled apple crisp bites before serving.
