Apple Crisp Bites

Ingredients:

  • Apples, peeled and diced
  • Butter
  • Spices (such as cinnamon, nutmeg)
  • Brown sugar
  • Water
  • Cornstarch
  • Flour
  • Oats
  • Caramel topping (optional)

Directions:

  1. Preheat Oven and Prepare Muffin Tin
    • Preheat the oven to 350 degrees F (175 degrees C).
    • Grease a 24-cup mini-muffin tin.
  2. Prepare Apple Filling
    • In a medium-sized pan, melt butter.
    • Add diced apples, spices, brown sugar, and 3 tablespoons of water.
    • Cook over medium-high heat for 4-6 minutes until apples slightly soften.
  3. Thicken Filling
    • In a small dish, mix cornstarch and 2 tablespoons of water.
    • Add the cornstarch mixture to the pan while stirring.
    • Continue cooking until the apples are tender and the filling thickens (about 4-5 minutes). Allow it to cool.
  4. Make Crust
    • In a large bowl, combine flour, oats, and brown sugar.
    • Cut butter into the flour mixture using a pastry cutter until it resembles coarse crumbs.
  5. Prepare Muffin Cups
    • Place a heaping tablespoon of the crust mixture into each mini-muffin cup.
    • Press along the bottom and sides to form a “cup”, leaving some crust mixture leftover.
  6. Fill the Cups
    • Spoon about 1 tablespoon of apple filling into each crust cup.
    • Sprinkle approximately 1 teaspoon of the remaining crust mixture on top of the filling.
  7. Bake
    • Bake in the preheated oven until golden brown, around 15 to 20 minutes.
  8. Cool and Serve
    • Allow the bites to cool in the pan for about 10 minutes.
    • Use a knife to loosen them from the pan, and they should easily come out.
    • If desired, drizzle caramel topping over the cooled apple crisp bites before serving.

These Apple Crisp Bites are a perfect mini version of the classic apple crisp, providing a deliciously crisp oatmeal cookie crust outside and soft apple pie inside. Enjoy!
