Southern Fried Chicken

Ingredients:

  • 6 pieces of chicken (any preferred parts)
  • 2 cups all-purpose flour
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp each of oregano, parsley, thyme
  • 1 tsp adobo
  • 2 tsp salt
  • 1 tsp pepper
  • 3 large eggs
  • 2 cups buttermilk
  • Peanut oil for frying

Instructions:

  1. Combine flour, chili powder, paprika, garlic powder, onion powder, oregano, parsley, thyme, adobo, salt, and pepper in a large ziplock bag. Shake to mix well.
  2. In a shallow dish, whisk eggs and buttermilk together.
  3. Dip each chicken piece in the egg-buttermilk mixture, ensuring it’s coated well. Then place it into the ziplock bag with the seasoned flour. Shake to coat evenly.
  4. Place coated chicken on a wire rack and let it rest for at least 15 minutes to allow the coating to set.
  5. Heat peanut oil in a large skillet or Dutch oven to 350°F (175°C). Carefully place chicken pieces into the hot oil, ensuring not to overcrowd the skillet.
  6. Fry the chicken for 12-15 minutes on each side or until the internal temperature reaches 165°F (74°C) and the chicken turns golden brown.
  7. Remove chicken from the skillet and place on a wire rack to cool for a few minutes.
  8. Serve the chicken hot with preferred dipping sauce or sides.
