Bobotie

  • 2 large eggs
  • 1 cup milk
  • Pinch of salt

For Garnish:

  • Bay leaves
  • Blanched almonds

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 180°C (350°F).
  2. Prepare the Meat Mixture:
    • In a bowl, tear the bread into small pieces and soak it in 1 cup of milk. Mash the soaked bread with a fork to form a smooth paste.
    • In a large pan, heat the vegetable oil and sauté the onions until they are soft and translucent.
  1. Add the minced garlic and ground meat to the pan. Cook until the meat is browned.
  2. Add the curry powder, turmeric, coriander, cumin, and cinnamon to the meat. Stir well to combine.
  3. Mix in the bread paste, raisins or sultanas, and chutney. Season with salt and pepper to taste. Simmer for 10-15 minutes.
  4. Transfer to Baking Dish:
  1. Transfer the meat mixture to a greased baking dish and spread it evenly.
  2. Prepare the Topping:
    • In a separate bowl, beat the eggs, and then mix in the milk and a pinch of salt.
    • Pour the egg mixture over the meat in the baking dish.
  3. Bake:
    • Place bay leaves on top of the egg mixture and sprinkle with blanched almonds.
    • Bake in the preheated oven for approximately 30-40 minutes or until the topping is set and golden brown.
  1. Serve:
    • Allow the Bobotie to cool for a few minutes before slicing. Serve it with rice, chutney, and maybe a side of vegetables.
