Chicken Suya Recipe (Nigerian Suya)

Marinate the Chicken:

  1. In a bowl, mix together all the ingredients for the chicken marinade until well combined.
  2. Add the chicken strips to the marinade, ensuring each piece is well coated. Cover and let it marinate in the refrigerator for at least 2 hours, or overnight for better flavor.

Prepare the Suya Spice Mix:

  1. In a dry skillet, lightly roast the peanuts until they become fragrant. Allow them to cool.
  2. Grind the roasted peanuts into a powder using a blender or food processor.
  3. In a bowl, combine the ground peanuts with the paprika, cayenne pepper, onion powder, garlic powder, ground ginger, and salt. Mix well.

Skewer and Grill the Chicken:

  1. If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
  2. Preheat a grill or grill pan over medium-high heat.
  3. Thread the marinated chicken strips onto the skewers.
  4. Grill the chicken skewers for about 8-10 minutes, turning occasionally, until they are cooked through and have a nice char.

Serve the Chicken Suya:

  1. Sprinkle the chicken skewers generously with the suya spice mix.
  2. Serve the Chicken Suya hot, garnished with sliced onions, tomatoes, and chopped cilantro or parsley if desired.
  3. Optionally, drizzle extra groundnut oil or serve with additional suya spice mix on the side for those who prefer extra heat.
