Chicken Suya Recipe (Nigerian Suya)

Suya is a popular Nigerian street food known for its spicy grilled or skewered meat, often served with sliced onions, tomatoes, and a spicy peanut-based sauce. Here’s a basic recipe for making Chicken Suya:

Ingredients:

For the Chicken Marinade:

  • 1.5 to 2 pounds boneless, skinless chicken thighs or breasts, cut into thin strips
  • 1/4 cup groundnut oil (peanut oil)
  • 2 tablespoons ground paprika
  • 1 tablespoon ground cayenne pepper (adjust to taste)
  • 1 tablespoon ground ginger
  • 1 tablespoon ground garlic
  • 1 teaspoon onion powder
  • 1 teaspoon ground coriander
  • Salt to taste
  • Bamboo skewers, soaked in water (if grilling)

For the Suya Spice Mix:

  • 1 cup roasted peanuts, ground into a powder
  • 2 tablespoons ground paprika
  • 1 tablespoon cayenne pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • Salt to taste
