Yorkshire Puddings (gluten free & vegan)

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
  2. Prepare the Batter:
    • In a mixing bowl, whisk together the gluten-free all-purpose flour, chickpea flour, almond milk, water, xanthan gum, baking powder, and salt until you have a smooth batter.
    • Let the batter rest for at least 30 minutes. This helps it thicken.
  1. Add Oil to Muffin Tin:
    • Place a small amount of vegetable oil in each section of a muffin tin or a Yorkshire pudding tin. Put the tin in the oven to heat the oil.
  2. Fill the Tin:
    • Once the oil is hot, carefully remove the tin from the oven and pour the batter into each section, filling it about halfway.
  3. Bake:
    • Place the tin back in the oven and bake for 20-25 minutes or until the Yorkshire puddings are puffed up and golden brown.
  1. Serve:
    • Remove from the oven and serve the Yorkshire puddings immediately while they are still puffed up.
