Apple Pie Cookies

  1. Prepare the Apple Filling:
    • In a saucepan, melt the butter over medium heat. Add the diced apples, brown sugar, ground cinnamon, and lemon juice. Cook, stirring occasionally, until the apples are softened and the mixture has thickened. Set aside to cool.
  2. Make the Cookie Dough:
    • In a bowl, whisk together the flour and salt.
    • In a separate large bowl or mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Add the egg and vanilla extract to the butter mixture, beating well.
    • Gradually add the flour mixture to the wet ingredients, mixing until just combined. Do not overmix.
