Vegetable Samosa Pie

  1. Prepare the Filling:
    • Heat oil in a large pan over medium heat. Add chopped onions and sauté until softened.
    • Add minced garlic and grated ginger. Cook for an additional minute until fragrant.
    • Stir in ground cumin, ground coriander, turmeric, garam masala, and chili powder. Cook for another minute.
    • Add diced potatoes, peas, and grated carrot. Season with salt. Cook until the potatoes are tender, stirring occasionally.
    • Once the vegetables are cooked, add chopped fresh cilantro. Remove the filling from heat and let it cool.

    • Preheat your oven to the temperature specified on the pie crust package or according to your homemade pie crust recipe.
  2. Assemble the Pie:
    • Roll out one pie crust and line a pie dish. Trim any excess crust hanging over the edges.
    • Spoon the cooled vegetable filling into the pie crust, spreading it out evenly.
    • Roll out the second pie crust and place it over the filling. Trim the excess edges and crimp the edges to seal the pie.

    • Whisk the egg and brush it over the top of the pie for a golden finish. You can also sprinkle sesame seeds on top for added texture.

    • Bake the samosa pie in the preheated oven according to the pie crust package instructions or until the crust is golden brown.
  3. Cool and Serve:
    • Allow the pie to cool for a few minutes before slicing and serving.
