Raspberry Custard Buns

  1. Prepare the Dough:
    • In a large mixing bowl, combine 3 cups of flour, sugar, and salt. In a separate bowl, dissolve the yeast in warm milk. Let it sit for 5-10 minutes until it becomes frothy.

    • Add the yeast mixture, melted butter, and egg to the dry ingredients. Mix until a soft dough forms. Knead on a floured surface, adding the remaining 1/2 cup of flour as needed, until the dough is smooth and elastic.

    • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until it doubles in size.

    • In a saucepan, combine raspberries, sugar, and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens. Remove from heat and let it cool.

Remove from heat, stir in vanilla extract, and let it cool.

    • Punch down the risen dough and divide it into equal portions. Flatten each portion into a disc, spoon some raspberry filling and custard onto the center, and fold the edges to seal the bun.

    • Place the filled buns on a baking sheet, cover, and let them rise for another 30-45 minutes.
  2. Bake:
    • Preheat your oven to 350°F (175°C). Bake the buns for 15-20 minutes or until they are golden brown.

    • Optionally, you can brush the tops of the buns with a simple sugar glaze made by mixing powdered sugar with a small amount of water.
