Salted Caramel Chocolate Cake

1. Prepare the Chocolate Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour three 8-inch cake pans.
  • In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add eggs, milk, oil, and vanilla extract. Beat on medium speed until well combined.
  • Stir in the boiling water until the batter is smooth. The batter will be thin.
  • Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

2. Make the Salted Caramel Sauce:

  • In a saucepan over medium heat, melt granulated sugar, stirring constantly until it turns into a golden amber color.
  • Add the butter and stir until melted. Slowly pour in the heavy cream while stirring continuously.
  • Remove from heat and stir in the sea salt. Allow the caramel sauce to cool.

3. Prepare the Chocolate Ganache:

  • Place chocolate chips in a heatproof bowl.
  • Heat the heavy cream in a saucepan until it just begins to boil.
  • Pour the hot cream over the chocolate chips and let it sit for 2-3 minutes. Stir until smooth.

4. Assemble the Cake:

  • Place one chocolate cake layer on a serving plate. Spread a layer of salted caramel sauce over the top.
  • Place the second cake layer on top and repeat with caramel sauce.
  • Add the final cake layer and cover the entire cake with chocolate ganache, allowing it to drip down the sides.
  • Drizzle additional salted caramel sauce on top for decoration.

5. Serve and Enjoy:

  • Slice the cake and serve. Optionally, you can sprinkle a bit more sea salt on top for added garnish.
