Ginger Matoke Masala

  1. Prepare the Matoke:
    • Peel the green bananas and slice them into rounds. You can soak them in water to prevent discoloration.

    • In a large pan or pot, heat the vegetable oil over medium heat. Add the finely chopped onions and sauté until they become translucent.

    • Reduce the heat to low, cover the pan, and let the matoke simmer for about 20-25 minutes or until they are tender. Stir occasionally.
  3. Adjust Seasonings:
    • Season the Ginger Matoke Masala with salt to taste. Adjust the spice levels if needed.

    • Garnish with chopped cilantro.
    • Serve the Ginger Matoke Masala hot, accompanied by rice or your favorite bread.
    • Squeeze a bit of lemon juice over the dish before serving for a burst of freshness.
