- Peel the Plantains:
- Cut off both ends of the plantains and make a lengthwise slit through the skin, being careful not to cut into the flesh. Peel the skin away.
- Cut into Pieces:
- Cut the peeled plantains into rounds, each about 1 to 1.5 inches thick.
- Fry the Plantains (First Fry):
- Heat the cooking oil in a deep skillet or frying pan over medium-high heat.
- Carefully add the plantain slices to the hot oil, frying for about 2-3 minutes on each side or until they are lightly golden.
- Remove the partially fried plantains and place them on a paper towel-lined plate to drain excess oil.
- Flatten the Plantains:
- Using the back of a flat surface, like a cup or a tostonera (if you have one), gently flatten each partially fried plantain slice into a disc.
- Fry Again (Second Fry):
- Return the flattened plantains to the hot oil and fry for an additional 2-3 minutes on each side or until they become golden brown and crispy.
- Drain and Season:
- Remove the tostones from the oil and place them on a paper towel to drain any excess oil.
- Sprinkle salt over the tostones while they are still hot.
- Serve:
- Serve the tostones immediately as a side dish or snack.
Optional: Garlic Dipping Sauce (Mojo Sauce):
- Ingredients:
- 1/2 cup olive oil
- 3 cloves garlic, minced
- 1 teaspoon fresh lime or lemon juice
- Salt and pepper, to taste
- Instructions:
- In a small saucepan, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Remove from heat and stir in lime or lemon juice, salt, and pepper.
- Allow the sauce to cool slightly before serving with the tostones.
