Blueberry Coconut Mojito

Ingredients:

– 10 fresh mint leaves

– ½ cup fresh blueberries

– 1 oz fresh lime juice (about half a lime)

– 1 oz simple syrup (or 2 teaspoons sugar)

– 2 oz white rum

– 2 oz coconut water (or coconut cream for a creamier version)

– Club soda (to top off)

– Ice

– Fresh blueberries, mint sprig, and lime wedge (for garnish)

Directions:

1. **Muddle the Ingredients:

– In a sturdy glass or cocktail shaker, add the fresh mint leaves, blueberries, and lime juice.

– Muddle gently to release the flavors, but avoid over-muddling the mint as it can turn bitter.

2. **Add Rum and Coconut:

– Pour in the white rum and simple syrup (or sugar) and coconut water (or coconut cream).

– Stir or shake the mixture to combine the flavors well.

3. **Serve:

– Fill a tall glass with ice and pour the blueberry-coconut mixture over the ice.

– Top off with club soda for a refreshing fizz.

4. **Garnish:

– Garnish with a few fresh blueberries, a sprig of mint, and a lime wedge for a tropical flair.
