Meatloaf with Mashed Potatoes and Cheese

  1. Heat the oil in a skillet over medium-high heat. Sauté onions for 5 minutes until softened. Add crushed garlic and cook for 1 more minute until fragrant. Remove from heat and let cool for 10 minutes.
  2. Meanwhile, prepare mashed potatoes: Cook chopped potatoes in salted boiling water for 12 to 15 minutes until tender. Drain well, return to the skillet over low heat. Add 40g of butter and milk. Mash until smooth, then add cheese. Season with salt and pepper.
  3. Preheat the oven to 180°C / 160°C convection. Grease a baking tray (7 cm deep, 11 cm x 21 cm wide) and line it with parchment paper, extending the paper 3 cm above the edges.
  4. In a large bowl, combine ground beef, peas, beaten egg, dried rusks, BBQ sauce, tomato sauce, parsley, onion-garlic mixture, salt, and pepper. Mix until well combined. Transfer this mixture into the prepared tray, pressing it down with the back of a spoon until smooth.
  5. Bake the meatloaf in the preheated oven for about 25 minutes or until golden brown and almost done.
  6. Remove the meatloaf from the oven and increase the oven temperature to 200°C / 180°C. Pour the mashed potatoes over the meatloaf, add remaining butter, and bake for an additional 20 to 25 minutes or until the potatoes turn golden brown.
  7. Let the meatloaf rest in the skillet for 10 minutes before transferring it to a plate. Serve sliced with sauce.
