Creamy Hungarian Mushroom Soup

Ingredients:

  • 3 tablespoons unsalted butter
  • 2 cups chopped onions
  • 1 pound fresh mushrooms, sliced (button or cremini mushrooms work well)
  • 2 teaspoons dried dill weed
  • 1 tablespoon paprika (preferably Hungarian)
  • 1 tablespoon soy sauce
  • 2 cups chicken or vegetable broth
  • 1 cup milk or half-and-half
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish
  • Sour cream for garnish (optional)

Instructions:

  1. Saute Mushrooms and Onions: In a large pot, melt the butter over medium heat. Add the chopped onions and cook until they become translucent, for about 5 minutes. Add the sliced mushrooms, dill weed, and paprika. Stir well to combine.
