KIELBASA SOUP WITH POTATOES

Ingredients:

  • 1 pound Kielbasa sausage, sliced
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 1/2 cup celery, finely sliced
  • 2 large carrots, peeled and diced
  • 4 cups chicken stock
  • 1 1/2 pounds potatoes, diced
  • 1/2 cup Parmesan cheese, shredded
  • 2 cups milk
  • 2 cups Cheddar cheese, shredded
  • 1/4 cup parsley, roughly chopped
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the sliced Kielbasa sausage and cook until lightly browned. Remove the sausage from the pot and set it aside.
  2. In the same pot, add minced garlic, diced onion, celery, and carrots. Sauté until the vegetables are slightly tender, about 5 minutes.
