Chicken Noodle Soup with Homemade Egg Noodles

Instructions for Homemade Egg Noodles:

In a large bowl, combine the flour and salt. Make a well in the center.
Crack the eggs into the well and lightly beat them.
Gradually incorporate the flour into the eggs, adding water as needed to form a soft dough. The dough should be slightly sticky but manageable.
Turn the dough onto a floured surface and knead it for about 5 minutes until smooth and elastic.
Cover the dough with a clean kitchen towel and let it rest for 30 minutes.
Roll out the dough to your desired thickness and cut it into thin strips to make egg noodles. Set the noodles aside.

8 cups chicken broth
2 cups cooked chicken, shredded

1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
