Strawberry Pie

Ingredients:

  • 1 All Butter Pie Crust (pre-baked and cooled)
  • 2 pounds fresh strawberries
  • 1 cup (200g) granulated sugar
  • 1/3 cup (79 ml) water
  • 3 tablespoons cornstarch
  • Whipped cream for garnish

Instructions:

  1. Prepare the Crust:
    • Blind bake your pie crust according to the package or recipe instructions. Once baked, allow it to cool completely.
  2. Prepare Strawberry Filling:
    • Measure out two cups of strawberries. Wash, hull, and crush them using a potato masher.
    • In a medium saucepan, combine the crushed strawberries, granulated sugar, water, and cornstarch.
    • Cook this mixture over medium heat, stirring frequently, until it reaches a boil. Allow it to boil for 1 minute, then remove it from the heat. Let it cool completely before using. You can prepare this a day in advance and refrigerate it overnight.
  1. Assemble the Pie:
    • Hull and slice the remaining strawberries. Place them in a bowl.
    • Once the strawberry filling has cooled, pour it over the sliced strawberries in the bowl. Stir to combine.
    • Place the strawberry filling into the pre-baked and cooled pie crust.
    • Chill the pie in the refrigerator for at least 2 hours before slicing and serving.
  2. Serve:
    • Before serving, garnish the pie with fresh whipped cream.

Recipe Notes:

  • You can use a refrigerated or frozen pie crust if preferred.
  • If you want a completely no-bake pie, consider using a graham cracker crust instead.
  • This pie is best enjoyed on the same day it’s made to prevent it from becoming too watery if refrigerated overnight.
