Strawberry Pie
Ingredients:
- 1 All Butter Pie Crust (pre-baked and cooled)
- 2 pounds fresh strawberries
- 1 cup (200g) granulated sugar
- 1/3 cup (79 ml) water
- 3 tablespoons cornstarch
- Whipped cream for garnish
Instructions:
- Prepare the Crust:
- Blind bake your pie crust according to the package or recipe instructions. Once baked, allow it to cool completely.
- Prepare Strawberry Filling:
- Measure out two cups of strawberries. Wash, hull, and crush them using a potato masher.
- In a medium saucepan, combine the crushed strawberries, granulated sugar, water, and cornstarch.
- Cook this mixture over medium heat, stirring frequently, until it reaches a boil. Allow it to boil for 1 minute, then remove it from the heat. Let it cool completely before using. You can prepare this a day in advance and refrigerate it overnight.
- Assemble the Pie:
- Hull and slice the remaining strawberries. Place them in a bowl.
- Once the strawberry filling has cooled, pour it over the sliced strawberries in the bowl. Stir to combine.
- Place the strawberry filling into the pre-baked and cooled pie crust.
- Chill the pie in the refrigerator for at least 2 hours before slicing and serving.
- Serve:
- Before serving, garnish the pie with fresh whipped cream.
Recipe Notes:
- You can use a refrigerated or frozen pie crust if preferred.
- If you want a completely no-bake pie, consider using a graham cracker crust instead.
- This pie is best enjoyed on the same day it’s made to prevent it from becoming too watery if refrigerated overnight.
