Birria Wings with Consome

Ingredients:

  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon hot chili-garlic sauce (such as sriracha)
  • 2 teaspoons dark sesame oil
  • 1 teaspoon grated fresh ginger
  • 16 chicken wings (wing tips removed)
  • Vegetable oil
  • Kosher salt
  • Fresh ground black pepper

Preparation:

1. Make the Glaze:

  • In a small bowl, whisk together sweet chili sauce, soy sauce, hot chili-garlic sauce, dark sesame oil, and grated fresh ginger.

2. Prepare the Chicken Wings:

  • Trim excess skin from the edges of the chicken wings.
  • Lightly brush or spray the wings with vegetable oil.
  • Season the wings with salt and pepper to taste.

3. Grill the Chicken Wings:

  • Preheat your grill to Direct Medium heat.
  • Grill the chicken wings until the skin begins to crisp, about 10 minutes, turning once or twice during cooking.

4. Glazing the Wings:

  • Brush the wings with the prepared glaze and continue to grill until the meat is no longer pink at the bone, approximately 8 to 10 minutes.
  • Turn and brush the wings with the glaze 2 or 3 times during the final cooking process.

5. Serve:

  • Once cooked, transfer the wings to a serving platter.
  • Serve the grilled sweet chili chicken wings warm.

Recipe Notes:

  • Alternatively, you can bake the wings at 375°F for 45 minutes, then slather on the sauce, and bake again at 400°F for 20 minutes until the skin is brown and the sauce thickens.
