South African Piri-Piri Chicken

  1. Prepare the Marinade:
    • In a bowl, mix together olive oil, minced garlic, lemon juice, red wine vinegar, smoked paprika, cayenne pepper, dried oregano, ground cumin, salt, and black pepper.
  2. Marinate the Chicken:
    • Place the chicken pieces in a large bowl or a resealable plastic bag.
    • Pour the marinade over the chicken, ensuring all pieces are well-coated. Marinate in the refrigerator for at least 4 hours or overnight for best flavor.
  1. Grill the Chicken:
    • Preheat your grill to medium-high heat.
    • Remove the chicken from the marinade, allowing any excess to drip off.
    • Grill the chicken pieces, turning occasionally and basting with additional olive oil, until they are fully cooked and have a nice char. This usually takes about 30-40 minutes.
