Vetkoek

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour, salt, sugar, and instant yeast.
    • Gradually add the lukewarm water, mixing to form a soft and elastic dough. Knead the dough for about 8-10 minutes until it becomes smooth and elastic.
  2. Let the Dough Rise:
    • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until it has doubled in size.
  1. Shape the Vetkoek:
    • Punch down the risen dough and divide it into golf ball-sized portions.
    • Heat the vegetable oil in a deep pot or fryer to 350-375°F (175-190°C).
    • Flatten each dough ball slightly and carefully place it into the hot oil. Fry until golden brown on both sides, turning as needed. Each vetkoek should take about 3-5 minutes to cook.
  2. Drain and Cool:
    • Remove the vetkoek from the oil and place them on paper towels to drain any excess oil. Allow them to cool slightly.
  1. Serve:
    • Vetkoek can be served in various ways. You can slice them open and fill them with savory options like minced curry, shredded chicken, or cheese, or go for sweet fillings like jam or syrup.

Vetkoek is a versatile and delicious treat that can be enjoyed on its own or customized with your favorite fillings. Whether sweet or savory, it’s a beloved South African dish that’s perfect for snacking or as a meal.
