Quiche Lorraine

For the Pie Crust:

  1. Prepare the Dough:
    • In a food processor, combine the flour, cold diced butter, and salt. Pulse until the mixture resembles coarse crumbs.
  2. Add Water:
    • Gradually add ice water, one tablespoon at a time, and pulse until the dough comes together. Be careful not to overmix.
  1. Form a Disk:
    • Turn the dough out onto a lightly floured surface, gather it into a ball, flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Roll Out the Dough:
    • Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to fit a 9-inch (23 cm) pie dish.
  3. Line the Pie Dish:
    • Transfer the rolled-out dough to the pie dish, pressing it gently into the bottom and sides. Trim any excess overhang.
  1. Chill Again:
    • Place the pie dish with the crust in the refrigerator for about 15 minutes.
  2. Blind Bake (Optional):
    • Optionally, you can blind bake the crust by lining it with parchment paper and filling it with pie weights or dried beans. Bake for about 15 minutes, then remove the weights and parchment and bake for an additional 5 minutes until lightly golden. This helps prevent a soggy crust.

For the Filling:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Bacon and Cheese:
    • Cook the bacon until crispy, then crumble it. Toss the shredded cheese with 1 tablespoon of flour.
  3. Assemble Filling:
    • In a bowl, whisk together the heavy cream, eggs, salt, black pepper, and nutmeg (if using).
  4. Assemble Quiche:
    • Sprinkle half of the crumbled bacon over the bottom of the pie crust. Add the shredded cheese evenly. Pour the egg and cream mixture over the bacon and cheese. Sprinkle the remaining bacon on top.
  1. Bake:
    • Bake in the preheated oven for 30-35 minutes or until the filling is set and the top is golden brown.
  2. Cool and Serve:
    • Allow the Quiche Lorraine to cool for a few minutes before slicing. Serve warm or at room temperature.

Quiche Lorraine makes for a delicious brunch or light dinner. Customize it by adding ingredients like sautéed onions or mushrooms if desired. Enjoy!
