- Prepare the Marinade:
- In a bowl, combine minced garlic, salt, pepper, brown sugar, soy sauce, calamansi juice (or lemon juice), and cooking oil. Mix well to create the marinade.
- Marinate the Pork Belly:
- Place the pork belly slab in a large dish or resealable plastic bag. Pour the marinade over the pork, making sure it’s well-coated. Massage the marinade into the meat.
- Marinate the pork belly in the refrigerator for at least 4 hours, or overnight for better flavor. Turn the meat occasionally to ensure even marination.
- Preheat the Grill:
- Preheat your grill to medium-high heat.
- Grill the Pork Belly:
- Remove the pork belly from the marinade and let any excess drip off.
- Place the pork belly on the preheated grill, skin side down. Grill each side for about 10-15 minutes or until the pork is fully cooked and has a nice char. Cooking times may vary depending on your grill and the thickness of the pork.
- Baste with Marinade (Optional):
- Optionally, you can baste the pork belly with some of the remaining marinade during the last few minutes of grilling for added flavor.
- Rest and Slice:
- Allow the grilled liempo to rest for a few minutes before slicing. This helps the juices redistribute throughout the meat.
- Serve:
- Slice the Grilled Liempo into serving portions and serve hot. It’s often enjoyed with a side of soy sauce, vinegar, or a dipping sauce of your choice.
Tips:
- For a crispier skin, you can score the skin of the pork belly with a sharp knife before marinating.
- Serve Grilled Liempo with a side of atchara (pickled green papaya) or your favorite dipping sauce.
- If you don’t have a grill, you can also cook the marinated pork belly in an oven or stovetop grill pan.
Grilled Liempo is a crowd-pleaser and is perfect for gatherings or simple family meals. Enjoy the deliciously charred and flavorful pork belly!
