Sweet and Sour Crockpot 

  1. In a bowl, mix together soy sauce, ketchup, rice vinegar, brown sugar, garlic, and ginger to create the sweet and sour sauce.
  2. Place the chicken pieces in the slow cooker.
  3. Add the pineapple chunks, bell peppers, onion, and carrots to the slow cooker.
  4. Pour the sweet and sour sauce over the chicken and vegetables. Stir to coat the chicken and veggies with the sauce.
  1. Cover and cook on low for 4-6 hours or until the chicken is cooked through and the vegetables are tender.
  2. If you want a thicker sauce, mix 2 tablespoons of cornstarch with a little water to create a slurry. Stir the slurry into the crockpot during the last 30 minutes of cooking.
  3. Season with salt and pepper to taste.
  4. Serve the sweet and sour chicken over cooked rice.
  5. Garnish with sesame seeds and chopped green onions if desired.
