Lemon Garlic Chicken with Potatoes and Green Beans

Ingredients:

  • 6 tablespoons olive oil
  • 2 lemons (1 thinly sliced, 1 juiced)
  • 4 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 pound trimmed green beans
  • 8 small red potatoes, quartered
  • 4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)

Instructions:

  1. Preparation:
    • Preheat oven to 400°F.
    • Coat a large baking dish or cast-iron skillet with 1 tablespoon of olive oil.
    • Arrange the lemon slices in a single layer in the bottom of the dish or skillet.
  1. Prepare Olive Oil Mixture:
    • In a large bowl, mix the remaining olive oil, lemon juice, minced garlic, salt, and black pepper.
    • Add green beans to the mixture and toss to coat.
    • Remove the coated green beans with a slotted spoon or tongs and place them on top of the arranged lemon slices in the dish.
  2. Prepare Potatoes:
    • Add quartered red potatoes to the same olive oil mixture used for the green beans and coat them thoroughly.
    • Arrange the coated potatoes along the inside edge of the dish or skillet, on top of the green beans.
  3. Prepare Chicken:
    • Place the chicken breasts in the bowl with the olive oil mixture and coat them thoroughly.
    • Place the chicken, skin-side up, in the dish or skillet on top of the green beans and potatoes.
  4. Bake:
    • Pour any remaining olive oil mixture over the chicken.
    • Bake in the preheated oven at 400°F for the recommended cooking time until the chicken is cooked through and the vegetables are tender.

This recipe results in a flavorful dish with lemon-infused chicken, roasted potatoes, and green beans, all cooked together in the oven. Adjustments can be made according to personal taste preferences or dietary requirements. Enjoy your meal!
