Lemon Garlic Chicken with Potatoes and Green Beans
Ingredients:
- 6 tablespoons olive oil
- 2 lemons (1 thinly sliced, 1 juiced)
- 4 cloves garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3/4 pound trimmed green beans
- 8 small red potatoes, quartered
- 4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)
Instructions:
- Preparation:
- Preheat oven to 400°F.
- Coat a large baking dish or cast-iron skillet with 1 tablespoon of olive oil.
- Arrange the lemon slices in a single layer in the bottom of the dish or skillet.
- Prepare Olive Oil Mixture:
- In a large bowl, mix the remaining olive oil, lemon juice, minced garlic, salt, and black pepper.
- Add green beans to the mixture and toss to coat.
- Remove the coated green beans with a slotted spoon or tongs and place them on top of the arranged lemon slices in the dish.
- Prepare Potatoes:

- Arrange the coated potatoes along the inside edge of the dish or skillet, on top of the green beans.
- Prepare Chicken:
- Place the chicken breasts in the bowl with the olive oil mixture and coat them thoroughly.
- Place the chicken, skin-side up, in the dish or skillet on top of the green beans and potatoes.
- Bake:
- Pour any remaining olive oil mixture over the chicken.
- Bake in the preheated oven at 400°F for the recommended cooking time until the chicken is cooked through and the vegetables are tender.
