Pecan pie cobbler

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves
  • 1 cup light corn syrup
  • 3 eggs

Instructions:

  1. Preparation: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Prepare the batter: In a medium-sized bowl, whisk together the flour, baking powder, and salt. Add the milk, melted butter, 1 cup of sugar, and vanilla extract. Stir until the batter is smooth.
  1. Pour batter into baking dish: Transfer the batter into the prepared baking dish, spreading it evenly across the bottom.
  2. Prepare the pecan topping: In another bowl, whisk together the remaining 1/2 cup of sugar, corn syrup, and eggs until well combined. Stir in the pecan halves.
  3. Add the pecan mixture: Pour the pecan mixture evenly over the batter in the baking dish. The batter may mix slightly with the pecan mixture; this is okay.
  4. Bake: Place the baking dish in the preheated oven and bake for approximately 45 minutes. The dish should be golden brown, and the center should be set.
  5. Serve: Once done baking, allow the pecan dessert to cool for a bit. Serve it warm with whipped cream or a scoop of vanilla ice cream if desired.
