Fetta, thyme and honey loaded loaf

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add Feta and Thyme:
    • Gently fold in the crumbled feta cheese and fresh thyme leaves into the dry ingredients.
  1. Wet Ingredients:
    • In a separate bowl, whisk together the eggs, milk, olive oil, and honey until well combined.
  2. Combine Wet and Dry Mixtures:
    • Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Do not overmix; it’s okay if there are some lumps.
  3. Fill the Loaf Pan:
    • Pour the batter into the prepared loaf pan, spreading it evenly.
  1. Bake:
    • Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.
  2. Cool:
    • Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  1. Optional: Garnish with Thyme and Honey:
    • If desired, drizzle a bit of honey over the top of the loaf and sprinkle extra thyme leaves for garnish.
  2. Slice and Serve:
  • Once the loaf has cooled, slice it and serve. Enjoy the delicious combination of feta, thyme, and honey in every bite.

This loaded loaf makes for a great side dish, snack, or even a light lunch. The savory notes of feta and thyme combined with the sweetness of honey create a well-balanced and flavorful treat.
