Chicken Katsu

  1. Prepare the Chicken:

    • If the chicken breasts are thick, you can butterfly them or use a meat mallet to flatten them to an even thickness. Season both sides with salt and pepper.

    Coat the Chicken:

    • Dredge each chicken breast in the flour, shaking off excess. Then dip into the beaten eggs, and finally coat with panko breadcrumbs, pressing the breadcrumbs onto the chicken to adhere.

  1. Fry the Chicken:

    • Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the breaded chicken breasts. Fry for about 4-5 minutes per side or until they are golden brown and cooked through.

    Make the Katsu Sauce:

    • While the chicken is frying, mix together ketchup, Worcestershire sauce, soy sauce, oyster sauce, and sugar in a small bowl. Stir until the sugar is dissolved.

  1. Serve:

    • Once the chicken is cooked, transfer it to a paper towel-lined plate to absorb excess oil. Let it rest for a minute, then slice it into strips.Serve the Chicken Katsu with a side of steamed rice and drizzle the katsu sauce over the top. You can also serve it with shredded cabbage or a simple side salad.

    Garnish (optional):

    • Garnish with chopped green onions or sesame seeds for added flavor and presentation.
