Instructions
1. Cook the Beef
- In a skillet, brown ground beef over medium heat.
- Drain excess grease.
- Stir in taco seasoning + ½ cup water.
- Simmer until thickened, about 3–4 minutes.
2. Warm the Beans & Tortillas
- Heat refried beans until spreadable.
- Warm tortillas briefly so they roll easily.
3. Assemble the Enchiritos
For each tortilla:
- Spread 2–3 tablespoons refried beans in the center.
- Add a spoonful of seasoned beef.
- Sprinkle diced onion.
- Roll up tightly like a burrito.
4. Sauce & Cheese
- Place rolled enchiritos seam-side down in a baking dish.
- Pour enchilada sauce evenly over the top.
- Cover with shredded cheese.
5. Bake
- Bake at 375°F (190°C) for 10–12 minutes until cheese is melted and bubbly.
6. Serve
Serve hot with extra onions, sour cream, or jalapeños if desired!
