Baked Spinach with Tomato Toppings

Ingredients

  • 4 cups fresh spinach (or 2 cups frozen, thawed and drained)
  • 2 medium tomatoes, thinly sliced
  • 2 cloves garlic, minced
  • ½ cup shredded mozzarella or cheddar cheese (optional but delicious)
  • 2 tbsp olive oil or butter
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ tsp red chili flakes (optional)
  • ½ tsp dried oregano or Italian seasoning

Instructions

1. Prep the Spinach

  • If using fresh spinach, sauté it in a pan with 1 tbsp olive oil for 2–3 minutes until wilted.
  • Add a pinch of salt and pepper.

2. Arrange in a Baking Dish

  • Spread the cooked (or thawed) spinach evenly in a small baking dish.
  • Sprinkle minced garlic over the spinach.

3. Add Tomato Toppings

  • Layer sliced tomatoes on top.
  • Drizzle with olive oil.
  • Season with black pepper, chili flakes, and oregano.

4. Add Cheese (Optional)

  • Sprinkle mozzarella or cheddar on top for a cheesy version.

5. Bake

  • Bake at 180°C (350°F) for 15–20 minutes, until tomatoes soften and cheese melts.

Serve With
