Ingredients
- 4 boneless chicken breasts
- 1 cup spinach (fresh or thawed frozen)
- ½ cup cream cheese
- ½ cup shredded mozzarella
- 2 tbsp grated Parmesan (optional but great)
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & pepper (to taste)
- 2 tbsp olive oil
Instructions
- Preheat oven to 200°C (400°F).
- Cut a pocket into each chicken breast (don’t cut all the way through).
- In a bowl, mix spinach, cream cheese, mozzarella, Parmesan, garlic powder, salt, and pepper.
- Stuff each chicken breast with the spinach-cheese mixture.
- Rub the outside of the chicken with olive oil, paprika, and a little salt.
- Heat a skillet and sear the chicken for 2 minutes per side to get color.
- Transfer to a baking dish and bake for 18–20 minutes, or until chicken is fully cooked.
- Let rest for 5 minutes and serve warm.
