Ingredients
- 6 fresh strawberries (washed & dried completely)
- 6 tbsp sweet red bean paste (anko)
- 1 cup glutinous rice flour (mochiko)
- 1/4 cup sugar
- 2/3 cup water
- Cornstarch or potato starch (for dusting)
Instructions
1. Prep the Strawberries
- Remove stems.
- Pat dry (very important or mochi will get soggy).
- Wrap each strawberry with 1 tbsp red bean paste.
- Make a small ball covering the berry and set aside.
2. Make the Mochi Dough
- In a microwave-safe bowl, mix:
- 1 cup glutinous rice flour
- 1/4 cup sugar
- 2/3 cup water
- Mix into a smooth batter.
3. Cook the Mochi
Microwave method:
- Microwave 1 minute → stir.
- Microwave again 1 minute → stir.
- Microwave 30–45 seconds until thick, sticky, and glossy.
Stovetop method:
- Cook on low heat while stirring until it becomes thick and stretchy.
4. Shape the Mochi
- Dust a tray with starch.
- Carefully place the hot mochi dough onto the tray.
- Dust your hands with starch and divide dough into 6 pieces.
- Flatten each piece into a circle.
- Place a strawberry (tip facing down).
- Stretch the mochi over the berry and pinch to seal.
5. Serve
- Let them cool 5–10 minutes.
- Enjoy fresh! (Best eaten same day.)
