Mochi

Ingredients

  • 6 fresh strawberries (washed & dried completely)
  • 6 tbsp sweet red bean paste (anko)
  • 1 cup glutinous rice flour (mochiko)
  • 1/4 cup sugar
  • 2/3 cup water
  • Cornstarch or potato starch (for dusting)

Instructions

1. Prep the Strawberries

  • Remove stems.
  • Pat dry (very important or mochi will get soggy).
  • Wrap each strawberry with 1 tbsp red bean paste.
    • Make a small ball covering the berry and set aside.

2. Make the Mochi Dough

  • In a microwave-safe bowl, mix:
    • 1 cup glutinous rice flour
    • 1/4 cup sugar
    • 2/3 cup water
  • Mix into a smooth batter.

3. Cook the Mochi

Microwave method:

  • Microwave 1 minute → stir.
  • Microwave again 1 minute → stir.
  • Microwave 30–45 seconds until thick, sticky, and glossy.

Stovetop method:

  • Cook on low heat while stirring until it becomes thick and stretchy.

4. Shape the Mochi

  1. Dust a tray with starch.
  2. Carefully place the hot mochi dough onto the tray.
  3. Dust your hands with starch and divide dough into 6 pieces.
  4. Flatten each piece into a circle.
  5. Place a strawberry (tip facing down).
  6. Stretch the mochi over the berry and pinch to seal.

5. Serve

  • Let them cool 5–10 minutes.
  • Enjoy fresh! (Best eaten same day.)
