Vegan Banana Blossom “Fish” Cakes
These plant-based patties mimic the texture of fish, making them a crowd-pleaser for vegans and omnivores alike.
Ingredients
- 1 cup cooked and flaked banana blossom (drained well if canned)
- 1 cup mashed potatoes
- 2 tablespoons chickpea flour or all-purpose flour
- 1 tablespoon nori seaweed flakes (for a “fishy” flavor, optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Oil for pan-frying
Directions
- In a bowl, combine the banana blossom, mashed potatoes, flour, seaweed flakes, garlic powder, onion powder, salt, and pepper.
- Shape the mixture into small patties.
- Heat oil in a non-stick pan and fry the patties until golden brown on both sides, about 3–4 minutes per side.
- Serve with vegan tartar sauce or sweet chili sauce for a delicious twist.
