Authentic Irish Potato Farls

  1. Boil the Potatoes:
    • Cut the peeled potatoes into chunks and boil them in a pot of salted water until they are soft and easily pierced with a fork.
  2. Mash the Potatoes:
    • Drain the boiled potatoes and mash them thoroughly. Add the butter and continue to mash until the butter is melted and well combined. Season with salt to taste.

    • Transfer the mashed potatoes to a large mixing bowl. Gradually add all-purpose flour, kneading the mixture until it forms a soft, pliable dough. Be cautious not to over-knead, as this can make the farls tough.

    • On a floured surface, divide the dough into four equal portions. Shape each portion into a round, flat disc, about 1/2 to 3/4 inch thick.

    • Heat a griddle or a large, flat pan over medium heat. Once hot, lightly grease the surface with butter or oil.
    • Place the potato farls on the griddle and cook for about 5-7 minutes on each side or until they develop a golden brown color and a slightly crispy texture.
  1. Serve:
    • Once cooked, transfer the farls to a cutting board and cut each into quarters. Serve warm.
