Pacharisi Puttappam Recipe (Soft Sweet Appam)
Ingredients:
- Raw rice (pacharisi) – 1 cup
- Jaggery – ¾ cup (adjust to sweetness)
- Grated coconut – ¼ cup
- Cardamom powder – ½ tsp
- Ripe banana – 1 small (optional but makes appam soft)
- Baking soda – a pinch
- Water – as needed
- Ghee/oil – for frying
Instructions:
1. Soak the Rice
- Wash raw rice and soak in water for 2–3 hours.
- Drain the water completely.
2. Prepare Jaggery Syrup
- Melt jaggery with ¼ cup water.
- Strain to remove impurities and keep aside.
3. Make the Batter
- Grind soaked rice + banana into a smooth batter (not too thick).
- Add grated coconut, cardamom powder, and jaggery syrup.
- Mix well.
- Add a pinch of baking soda just before frying.
- Batter should be pouring consistency (like dosa batter but slightly thicker).
4. Fry the Appams
- Heat a paniyaram pan (appa kadai).
- Add a little ghee/oil in each mould.
- Pour batter into the moulds (3/4 full).
- Cover and cook on low flame until golden.
- Flip and cook the other side until nicely browned.
