⭐ Pacharisi Puttappam Recipe (Soft Sweet Appam)

Ingredients:

  • Raw rice (pacharisi) – 1 cup
  • Jaggery – ¾ cup (adjust to sweetness)
  • Grated coconut – ¼ cup
  • Cardamom powder – ½ tsp
  • Ripe banana – 1 small (optional but makes appam soft)
  • Baking soda – a pinch
  • Water – as needed
  • Ghee/oil – for frying

Instructions:

1. Soak the Rice

  • Wash raw rice and soak in water for 2–3 hours.
  • Drain the water completely.

2. Prepare Jaggery Syrup

  • Melt jaggery with ¼ cup water.
  • Strain to remove impurities and keep aside.

3. Make the Batter

  • Grind soaked rice + banana into a smooth batter (not too thick).
  • Add grated coconut, cardamom powder, and jaggery syrup.
  • Mix well.
  • Add a pinch of baking soda just before frying.
  • Batter should be pouring consistency (like dosa batter but slightly thicker).

4. Fry the Appams

  • Heat a paniyaram pan (appa kadai).
  • Add a little ghee/oil in each mould.
  • Pour batter into the moulds (3/4 full).
  • Cover and cook on low flame until golden.
  • Flip and cook the other side until nicely browned.
