Ingredients
- 4 cups fresh spinach (or 2 cups frozen, thawed and drained)
- 2 medium tomatoes, thinly sliced
- 2 cloves garlic, minced
- ½ cup shredded mozzarella or cheddar cheese (optional but delicious)
- 2 tbsp olive oil or butter
- ½ tsp black pepper
- ½ tsp salt
- ½ tsp red chili flakes (optional)
- ½ tsp dried oregano or Italian seasoning
Instructions
1. Prep the Spinach
- If using fresh spinach, sauté it in a pan with 1 tbsp olive oil for 2–3 minutes until wilted.
- Add a pinch of salt and pepper.
2. Arrange in a Baking Dish
- Spread the cooked (or thawed) spinach evenly in a small baking dish.
- Sprinkle minced garlic over the spinach.
3. Add Tomato Toppings
- Layer sliced tomatoes on top.
- Drizzle with olive oil.
- Season with black pepper, chili flakes, and oregano.
4. Add Cheese (Optional)
- Sprinkle mozzarella or cheddar on top for a cheesy version.
5. Bake
- Bake at 180°C (350°F) for 15–20 minutes, until tomatoes soften and cheese melts.

- Toast
- Rice bowl
