Crust:
- 1 ½ cups graham cracker or biscuit crumbs

- 3 packages cream cheese (680g total), softened
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- ½ cup sour cream or yogurt

Instructions
1. Prepare the crust
- Mix crushed biscuits, sugar, and melted butter.
- Press the mixture into the bottom of a springform pan.
- Bake for 8–10 minutes at 325°F (160°C). Let cool.
2. Make the filling
- Beat cream cheese until smooth.
- Add sugar and mix well.
- Add eggs one at a time.
- Add vanilla and sour cream. Mix until creamy.
3. Bake
- Pour filling over the crust.
- Bake at 300°F (150°C) for about 55–65 minutes (edges set, center slightly jiggly).
- Turn off the oven and let the cheesecake sit inside for 1 hour.
- Chill for 4–6 hours or overnight.

- Beat cream cheese + sugar + vanilla.
- Fold in whipped cream.
- Spread mixture onto crust.
- Chill 4–6 hours.
