Spinach and Cheese Stuffed Chicken Breasts

Ingredients

  • 4 boneless chicken breasts
  • 1 cup spinach (fresh or thawed frozen)
  • ½ cup cream cheese
  • ½ cup shredded mozzarella
  • 2 tbsp grated Parmesan (optional but great)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper (to taste)
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Cut a pocket into each chicken breast (don’t cut all the way through).
  3. In a bowl, mix spinach, cream cheese, mozzarella, Parmesan, garlic powder, salt, and pepper.
  4. Stuff each chicken breast with the spinach-cheese mixture.
  5. Rub the outside of the chicken with olive oil, paprika, and a little salt.
  6. Heat a skillet and sear the chicken for 2 minutes per side to get color.
  7. Transfer to a baking dish and bake for 18–20 minutes, or until chicken is fully cooked.
  8. Let rest for 5 minutes and serve warm.
