– 1 cup rolled oats
– 1/2 cup almond flour (or ground almonds)
– 1 cup pitted dates, soaked in warm water for 10 minutes, then drained
– 1 ripe banana, mashed
– 1 1/2 cups grated carrots
– 1 teaspoon cinnamon
– 1/2 teaspoon nutmeg
– 1 teaspoon baking powder
– 1/2 cup unsweetened applesauce
– 1/4 cup chopped walnuts or pecans (optional)
– 1/4 cup raisins (optional)

Directions

1. **Preheat the Oven:
– Preheat your oven to 350°F (175°C) and line an 8-inch square or round baking pan with parchment paper.

2. **Blend Wet Ingredients:
– In a blender or food processor, blend the soaked dates and mashed banana until smooth.

3. **Combine Dry Ingredients:
– In a large mixing bowl, combine the oats, almond flour, cinnamon, nutmeg, and baking powder.

4. **Mix the Batter:
– Add the date-banana mixture, grated carrots, and applesauce to the dry ingredients. Stir until well combined. If using, fold in the nuts and raisins.
