Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken

Ingredients:

4 boneless, skinless chicken breasts

1 cup roasted red peppers, sliced

1 cup fresh spinach, chopped

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Toothpicks (for securing)

Directions:

1. Preheat Oven:

– Preheat your oven to 375°F (190°C).

2. Prepare the Chicken:

– Using a sharp knife, cut a pocket into each chicken breast, being careful not to cut all the way through.

– Season the chicken breasts inside and out with garlic powder, onion powder, dried Italian seasoning, salt, and pepper.

3. Stuff the Chicken:

– Stuff each chicken breast with sliced roasted red peppers, chopped spinach, and shredded mozzarella cheese.

– Secure the openings with toothpicks to keep the stuffing inside.

4. Sear the Chicken:

– In a large oven-safe skillet, heat the olive oil over medium-high heat.

– Add the stuffed chicken breasts and sear for 2-3 minutes on each side, until golden brown.

5. Bake the Chicken:

– Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

– Remove the toothpicks from the chicken breasts.
