Bacon-Wrapped Jalapeno Poppers: A Spicy, Smoky Delight!

Ingredients:

  • 10 jalapeno peppers
  • 5 slices of bacon, cut in half
  • 10 mini sausages or “smokies” (or 20 if very small)
  • 1 cup cream cheese
  • 1 cup grated Monterey Jack cheese
  • 1 tsp chipotle or chili powder
  • 2 small shallots, minced

Instructions:

  1. Prep the Peppers:
  • Slice the jalapenos lengthwise, removing seeds and membrane using a spoon. If using bell peppers, quarter them after seeding.
  1. Cheesy Filling:
  • In a bowl, mix cream cheese, Monterey Jack cheese, chipotle powder, and minced shallots. Fill the hollowed-out jalapenos with this flavorful cheese mixture.
  1. Sausage Addition:
  • Place a mini sausage on top of the cheese-filled jalapenos.
  1. Bacon Wrap:
  • Wrap each jalapeno half with a half slice of bacon. If the bacon doesn’t stay wrapped, use toothpicks to hold it in place.
  1. Ready for Smoke:
  • Smoke the poppers in a smoker at 225°F for 2-3 hours or until the bacon is nicely browned.
  1. Savor the Spice:
  • Once smoked to perfection, these Bacon-Wrapped Jalapeno Poppers are ready to be devoured. Remove any toothpicks before serving.

Note:

  • Exercise caution while handling jalapenos, as their oils can irritate the skin. Wearing gloves is recommended.
