Skinny Meatloaf
Ingredients:
For the Glaze:
- 1/4 cup ketchup
- 1 tbsp yellow mustard
- 2 tsp brown sugar
For the Meatloaf:
- 1 lb tenderloin or 96% lean ground beef
- 1 1/2 slices of whole wheat bread, without crust, shredded
- 1 cup Vidalia onion, chopped
- 3 egg whites (or large eggs)
- Pinch of salt
- 1/2 tsp pepper
- 3 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp Worcestershire sauce
Instructions:
- Preheat the oven to 350 degrees and prep a loaf pan with nonstick cooking spray.
- In a small bowl, whisk together the ketchup, yellow mustard, and brown sugar to make the glaze.
- In a large bowl, combine the ground beef, shredded bread, chopped onion, egg whites, salt, and pepper. Mix well.
- Pour the mixed sauce ingredients (glaze) over the ground beef mixture and work it into the meat using your hands.
- Transfer the meatloaf into the prepared loaf pan and shape it evenly.
- Bake at 350 degrees for 55 minutes or until fully cooked.
- Allow the meatloaf to cool for 10 minutes before cutting it into 5 equal pieces.
