Skinny Meatloaf

Ingredients:

For the Glaze:

  • 1/4 cup ketchup
  • 1 tbsp yellow mustard
  • 2 tsp brown sugar

For the Meatloaf:

  • 1 lb tenderloin or 96% lean ground beef
  • 1 1/2 slices of whole wheat bread, without crust, shredded
  • 1 cup Vidalia onion, chopped
  • 3 egg whites (or large eggs)
  • Pinch of salt
  • 1/2 tsp pepper
  • 3 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce

Instructions:

  1. Preheat the oven to 350 degrees and prep a loaf pan with nonstick cooking spray.
  2. In a small bowl, whisk together the ketchup, yellow mustard, and brown sugar to make the glaze.
  3. In a large bowl, combine the ground beef, shredded bread, chopped onion, egg whites, salt, and pepper. Mix well.
  4. Pour the mixed sauce ingredients (glaze) over the ground beef mixture and work it into the meat using your hands.
  5. Transfer the meatloaf into the prepared loaf pan and shape it evenly.
  6. Bake at 350 degrees for 55 minutes or until fully cooked.
  7. Allow the meatloaf to cool for 10 minutes before cutting it into 5 equal pieces.
