Old Fashion Chocolate Pie

For the Pie Filling:

  1. In a saucepan, mix sugar, flour, salt, and unsweetened cocoa powder.
  2. In a separate bowl, beat 2 egg yolks and mix with 2 1/2 cups of milk. Add this mixture to the saucepan.
  3. Add 4 tbsp of butter to the saucepan. Stir well.
  4. Place the saucepan over medium heat and stir with a wire whisk until the mixture starts to boil and thicken.
  5. Once the mixture reaches a pudding-like consistency, remove it from heat and let it cool for a bit.
  6. Stir in 1 tsp of vanilla extract.
  7. Pour the chocolate filling into a pre-baked pie crust.

For the Meringue:

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, combine 3 egg whites, 1 tbsp cornstarch, and 1/4 tsp cream of tartar.
  3. Beat at high speed until soft peaks form.
  4. Gradually add 6 tbsp of sugar, one tablespoon at a time, mixing well after each addition.
  5. Spoon the meringue onto the pie, making sure it touches the crust to prevent shrinking.
  6. Bake in the oven until the meringue turns golden brown.
