For the Pie Filling:
- In a saucepan, mix sugar, flour, salt, and unsweetened cocoa powder.
- In a separate bowl, beat 2 egg yolks and mix with 2 1/2 cups of milk. Add this mixture to the saucepan.
- Add 4 tbsp of butter to the saucepan. Stir well.
- Place the saucepan over medium heat and stir with a wire whisk until the mixture starts to boil and thicken.
- Once the mixture reaches a pudding-like consistency, remove it from heat and let it cool for a bit.
- Stir in 1 tsp of vanilla extract.
- Pour the chocolate filling into a pre-baked pie crust.
For the Meringue:
- Preheat the oven to 350 degrees.
- In a large bowl, combine 3 egg whites, 1 tbsp cornstarch, and 1/4 tsp cream of tartar.
- Beat at high speed until soft peaks form.
- Gradually add 6 tbsp of sugar, one tablespoon at a time, mixing well after each addition.
- Spoon the meringue onto the pie, making sure it touches the crust to prevent shrinking.
- Bake in the oven until the meringue turns golden brown.
