Lazy Pecan Pie Bars

Servings: About 16 bars

Ingredients:

  • 1 cup all-purpose flour
  • 1/3 cup light brown sugar, packed
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup corn syrup
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon melted butter
  • 1 1/2 cups chopped pecans

Directions:

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving an overhang for easy removal.
  2. Crust: In a medium bowl, combine flour, brown sugar, and salt. Cut in the cold butter until the mixture is crumbly. Firmly press into the bottom of the prepared pan to form a crust. Bake for 15 minutes until lightly golden.
  3. Filling: While the crust bakes, whisk corn syrup, granulated sugar, eggs, vanilla extract, and melted butter in a large bowl. Stir in the pecans. Spread evenly over the pre-baked crust.
  1. Bake for another 20-25 minutes, or until the filling is set.
  2. Cool completely in the pan on a wire rack. Use the parchment to lift out the bars before cutting into squares.
