  1. In a small bowl, whisk together all the ingredients for the Chow Mein sauce: soy sauce, oyster sauce, hoisin sauce, brown sugar, sesame oil, chicken broth (or water), and cornstarch. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken and stir-fry until it’s no longer pink. Remove chicken from the pan and set aside.
  3. In the same pan, add a little more oil if needed and sauté the onions and garlic until they become fragrant.
  4. Add the shredded cabbage, sliced carrots, bell peppers, and mushrooms. Stir-fry for a few minutes until the vegetables start to soften.
  5. Toss in the bean sprouts if using and return the cooked chicken to the pan.
  6. Pour the prepared Chow Mein sauce over the chicken and vegetables. Cook, stirring continuously, until the sauce thickens and coats the ingredients evenly.
  7. Add the cooked chow mein noodles to the pan. Toss everything together until the noodles are well coated with the sauce and heated through.
  8. Taste and adjust seasoning if needed. Serve the Chicken Chow Mein hot and enjoy!
