Autumn Dinner: Maple Chicken with Sweet Potatoes

  • Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, smoked paprika, dried thyme, and garlic powder.

3. Make the Maple Glaze:

  • In a small bowl, whisk together maple syrup, Dijon mustard, and olive oil.

4. Coat the Chicken:

  • Place the chicken thighs in a large bowl. Pour half of the maple glaze over the chicken and toss to coat evenly.

5. Prepare the Sweet Potatoes:

  • In a separate bowl, toss the sweet potato cubes with olive oil, ground cinnamon, salt, and pepper until well coated.

6. Roast in the Oven:

  • Place the coated chicken thighs skin side up on one side of a baking sheet and the seasoned sweet potatoes on the other side.
  • Brush the remaining maple glaze over the top of the chicken.
  • Roast in the preheated oven for about 30-35 minutes or until the chicken is cooked through, and the sweet potatoes are tender and slightly caramelized.
